A technique I use a lot when flying cross-country in competition, and especially on tandem flights, is flying the paraglider with one hand, holding both brakes. I usually grip with the outside brake of the turn, and that already gives me enough piloting range to keep turning and making corrections. This lets me keep turning with quite good feel, adjust my instrument, or even drink some water.

As you will see in the video, if the wing wants to surge you pull both brakes towards your chest, and if you need speed you raise your hands and control a little with your body and a little with the brake.
